We highly recommend getting your grout sealed after the cleaning process. A tile sealant is also recommended for natural stone because natural stone is also very porous. The sealer will penetrate into the grout and fill up the pores and block any liquids and dirt that is trying to soak in.

Unfilled travertine is travertine that has holes in it that are not filled, dirt and bacteria can get into those holes because regular mopping cannot get into those holes.
